
Of course you can serve your Cucina Verde kraut on the side of any meal that you are eating, but it is fun to experiment with different ways to combine it with your meals!
Kim Chi Pancakes
This is a great way to use your spicy Kim chi.
1/2 cup Kim chi
2 scallions, cut on a diagonal
1/2 cup flour
1/2 cup potato or tapioca starch
1/2 cup cold water
1 large egg
1 TBPS Kim chi brine
1 tsp soy sauce
Coconut oil or butter/ ghee
Chop the kimchi into bite sized pieces.
Place flour and starch in a large bowl and whisk to combine. Add cold water, egg, Kim chi brine and soy sauce. Whisk until smooth. Add Kim chi and scallions and stir.
Heat oil in a large cast iron pan.
Add 1/3 cup batter and spread it out with the back of a spoon until it is about 6 inches. Cook until crispy and golden, about 2 minutes each side. Repeat until all batter is cooked, adding more oil to pan as necessary.
Serve with a bit of soy sauce mixed with a touch of maple syrup if desired.

Leek and Mushroom Salad with Apple Fennel Kraut
Extra virgin olive oil
2 large leeks , washed well and sliced thinly
1 pound shitake mushrooms, sliced thinly
1 teaspoon whole grain mustard or dijon
Sea salt
1 apple sliced thinly
Juice of 1 lemon
Sea salt
Parsley for serving
Apple fennel kraut
Heat oil in pan.
Add leeks and saute until they begin to soften.
Add mushrooms and cook until soft.
Add mustard and stir through.
Season and remove to a bowl.
Add apple slices and lemon juice.
Season and serve garnished with parsley and apple fennel kraut
